Andrea Ribaldone, born 1971, left Milan for the Italian region of Piedmont, where his father was from, in the mid-nineties. Following in the steps of his mother and his grandfather, a pasta maker, he met Master Riccardo Aiachini, founder of the Alessandria restaurant La Fermata. After gaining experience in France at the restaurant Lucas Carton with celebrated chef Alain Senderens, his relentless quest for higher quality led La Fermata to win a Michelin Star in 2003. After collaborating with Oscar Farinetti-owned group Eataly as executive chef of the Tokyo branch, he left La Fermata in 2012 to found together with Salvatore Iandolino Arco srl, a company working in the restaurant management sector. Between 2013 and 2014 he served as consultant for several restaurants in Piedmont and executive chef for Borgo Egnazia’s summer season in Savelletri di Fasano, a town near Brindisi, Apulia. In fall 2013 he began a collaboration with the JSH Group, one of the top ten hospitality management companies in Italy in terms of number and quality of facilities, first as consultant and then as F&B Director. In the summer of 2014 he opened what is now considered his own restaurant, I Due Buoi in Alessandria, which was awarded a Michelin Star in December 2015. In 2015, throughout the whole period of Expo Milan he ran the restaurant Identità Expo San Pellegrino in collaboration with Magenta Bureau, the company owning the trademark Identità Golose, founded by Paolo Marchi and Claudio Ceroni. He returned to Borgo Egnazia in January 2016 as coordinator of the menus of six restaurants hosted by the resort, in collaboration with Domenico Schingaro.
