of Gaetano’s given name and “passami l’olio” means “pass me the olive oil”. Since 1995, quality Italian extra virgin olive oil is in the foundation of his tasteful, yet light signature dishes, in which the ingredients – strictly uncontaminated – play a fundamental role. He ́s a Master of Italian high cuisine made in the healthiest way. It’s not by chance that in his restaurant he makes as scant use of butter and has more than 40 different extra virgin olive oils to condiment his dishes.
