A worldwide premiere, The Bottarga knife at the launch of Bottarga academy

The Bottarga Academy has been officially launched at the Capital Club (Dubai) with the presentation of a special knife designed exclusively to slice this delicacy , one of the luxury ingredients of Italian cuisine , widely used in Sardinia. Bottarga is the Italian name for a delicacy of salted, cured fish roe, typically of the grey mullet grey frequently found near coastlines throughout the world,that often is featured in Italian Cuisine.
To produce bottarga the roe pouch of grey mullet grey mullet is massaged by hand to eliminate air pockets, then dried and cured in sea salt for a few weeks. The result is a hard, dry slab that sometimes is coated in beeswax for preservation purposes. The curing time may vary depending on producer and the desired texture as well as the preference of the consumers, which varies by country. The mission of the Bottarga Academy to promote bottarga, dried mullet roe, one of the most typical Italian ingredients at the international level and its culinary applications. The mission will be accomplished with the organization of workshops, tastings, culinary competitions and recipe development. The aim is to create a network of food and beverage professionals (chefs, restaurateurs, sommeliers, etc.) who are the ambassadors of Bottarga around the world. To become member of the network applicants must participate in one of the qualifying workshops organised by the Accademia della Bottarga . Each member is awarded a certificate and a jacket pin, is entitled to participate to the activities of the Accademia and receives Accademia’s periodical newsletter.
